Fried gambas with apricots and couscous

- Defrost and peel the gambas
- Peel and chop the garlic cloves, chop the onions
- Remove the seeds from the chilli pepper and slice it
- Rinse, then roughly cut the spinach
- Brown the onions with the chilli pepper in olive oil
- Add the spinach and allow to reduce for a few minutes
- Meanwhile, cook the couscous as indicated on the box
- In another pan, melt the butter and when it is hot, cook the gambas with the garlic and the white wine until they become pinkish
- Add the apricots sliced in 2 and brown for a short moment
- Add the spinach, the couscous, and decorate with the gambas and the apricots
- Season to your taste and finish with a bit of lime juice

- 250 g of Tipiak Couscous
- 8 fresh apricots
- 1 lime
