Recipe preparation
- Brown the garlic and the onion with olive oil in a pot
- Add the diced aubergine. When they are browned, add the peppers. Season with salt, pepper and the Provence herbs ( 1 teaspoon)
- After 10 minutes, add the courgettes and the tomatoes. Mix and cook for 15 minutes
- Cook the potatoes and mash them, add butter, crème fraîche and parmesan cheese
- Put this puree in a gratin dish. Put the vegetables on top
- Mix the Gruyere with the Breadcrumbs and one teaspoon of Provence herbs
- Sprinkle this mix on the gratin and cook in the oven for 20 to 30 minutes (180°C)

- 500 g of potatoes
- Butter
- 1 teaspoon of crème fraîche
- 30 g grated Parmesan cheese
- 30 g of grated Gruyere
- 40 g of Tipiak Breadcrumbs
