Salad mix of quinoa, figs, parma ham and pesto croutons

- In a salad bowl, pour 100 g of a quinoa gourmand and prepare as indicated on the pack. Keep in the fridge
- Cut each fig in 4 pieces
- Cut the feta cheese and dice the melon
- Slice the Parma ham
- Prepare the tapenade:
- Mash the olives, the anchovy fillets and the capers with a chopper
- Add some olive oil and carry on mashing the mix until you obtain a homogeneous mix
- Season with pepper and lemon juice
- Spread the tapenade on the croutons
- Prepare the seasoning
- Put in a salad bowl the cereal mix, the melon, the fig pieces and the Parma ham
- Add the croutons on top as a decoration
Suggestion:
- You can replace the figs with dried apricots
- You can replace the Parma ham with regular cured ham
- You can buy ready-made tapenade

- 1 bag of young salad leaves
- 100 g of feta cheese
- 100 g of Parma ham
- 8 dry figs
- 200 g of pitted green olives
- 100 g of capers
- 10 anchovy fillets
- 15 cl of olive oil
- 1 dash of lemon juice
- Black pepper
Seasoning:
- 1 tablespoon of mustard
- 1 tablespoon of honey
- 1 tablespoon of cider vinegar
- 4 tablespoons of olive oil
- Salt, pepper
